
How the coffee bean is extracted from the cherry makes a huge difference in how the coffee tastes! Simply washing the cherry off the bean tends to leave a cleaner, more balanced profile. But for this coffee the cherry was allowed to naturally fall off the bean, giving it a more unique, well-ripened, even boozy flavor!
